Prep time: 35 minutes | Cook time: 10 minutes | Serves: 6

Ingredients : 

½ pound lean ground beef
1 tablespoon minced onion
1 tablespoon steak seasoning
1 cup Monterey Jack and Colby cheese blend, shredded
8 slices white American cheese
2 (14-ounce) refrigerated prepared pizza dough sheets
2 eggs, beaten with 2 tablespoons water
24 hamburger dill pickle chips
2 tablespoons sesame seeds
6 slices tomato, for garnish
Ketchup and mustard, for serving

Directions : 

1. Fill your Traeger Smoker with wood pellets and follow the manufacturer’s specific start-up procedure. Preheat the grill to 325 degrees F/ 160 degrees C with the lid closed.
2. Brown the ground beef for 5 minutes in a medium sauté pan over medium-high heat; add the minced onion and steak seasoning; toss in the shredded cheese blend and 2 slices of American cheese, and stir them until melted and fully incorporated.
3. Remove the cheeseburger mixture from the heat and set aside.
4. Make sure the dough is well chilled for easier handling. Quickly roll out one prepared pizza crust on parchment paper and rub with half of the egg wash.
5. Arrange the remaining 6 slices of American cheese on the dough to outline 6 hand pies.
6. Top each cheese slice with ¼ cup of the cheeseburger mixture, spreading inside the imaginary lines of the hand pies.
7. Place 4 pickle slices on top of the filling for each pie.
8. Top the whole thing with the other prepared pizza crust and cut between the cheese slices to create 6 hand pies.
9. Using kitchen scissors cut the parchment to further separate the pies, but leave them on the paper.
10. Using a fork dipped in egg wash, seal the edges of the pies on all sides. Baste the top of the pies with the remaining egg wash and sprinkle with the sesame seeds.
11. Remove the pies from the parchment paper and gently place on the grill grate. Close the hood and smoke for 5 minutes, then carefully flip and smoke with the hood closed for 5 more minutes, or until browned.
12. Top with the sliced tomato and serve with ketchup and mustard.
